Ingredients: (makes 18 muffins)
- 2 cups rolled oats
- 1¾ cups flour
- 3 tbsp chia seeds*
- ¾ cup brown sugar
- 1 heaped tsp of cinnamon
- 2 flat tsp baking powder
- 1 flat tsp baking soda
- 3 eggs, beaten
- ¾ cup milk
- 1 cup apple sauce
- 1/3 cup oil
- 2 tsp vanilla extract
- 2 cups finely chopped apple
How to make:
- Preheat oven to 190 degrees C.
- Grease 18 holes in 2 muffin tins (I use silicon trays to reduce sticking!).
- In a large bowl, combine the dry ingredients.
- In a separate bowl, beat together the eggs, milk, apple sauce, oil, and vanilla extract.
- Add the wet ingredients to the dry ones, mix together and stir through the chopped apple.
- Bake the muffins for 15 to 20 minutes until a skewer comes out clean. Avoid overbaking.
*I always add chia seeds to my baking to boost the fibre, but you can make these without if you don’t have them in.
